Farm to Track Dinners: Pocono Organics
Pocono Organics is the vision of Ashley Walsh, granddaughter of Doctors Joe and Rose Mattioli who founded and built Pocono Raceway.
They are well on their way to creating the largest Regenerative Organic Farm that would have a significant impact on local and global scales. Pocono Organics has delicious seasonal food options as well as being an educational hub to help advance the efforts of Regenerative Organic Farming. They’re not only growing organic heirloom produce but also hemp for CBD.


This summer Pocono Organics hosted more than two dozen industry friends and partners at a few high-performance experiences to not only showcase the progress and potential of their 105-acre Regenerative Organic Farm in Long Pond, Pennsylvania but more importantly continue to grow relationships with like-minded people in both racing and farming.

Guests were treated to a dinner and behind-the-scenes farm tour of the main vegetable fields that were already growing and producing yields that were sold to race fans at Pocono Raceway throughout the weekend at Rodale Institute’s Mobile Farmer’s Market. This was the first step in Pocono Organics’ plans to educate and provide regenerative organic food to the 250,000+ attendees that annually visit Pocono Raceway for multi-entertainment events.

The tour continued through the 25-acre 3MW solar farm, which will provide power to the farm as well as powers Pocono Raceway, and also stopped off to see the farm’s growing colony of 300,000 honey bees!

Following the farm tour, a VIP experience began across the street at Pocono Raceway for the NASCAR cup series races. Partners had up-close and personal experiences as they took a tour of the garages, saw professional drivers and walked on Pit Road. Guests also had had their pictures taken with and cheered for the No. 51 Pocono Organics car that was in the race. A smaller group was hosted for IndyCar weekend as well!

The day was full of new beginnings and strengthening partnerships, who together have the opportunity to make the world a healthier place.
